Homemade soft tortillas/wraps

These are really really good. Soooo much better than that store bought rubbish. Once you start you’ll never be able to go back.

Just a heads up – these are really easy but rolling and cooking are somewhat time critical, so try to avoid having toddlers grasping you legs, needing to pee, or having to leave halfway through for school pick up.

The best way to keep your tortillas soft is to create your own “tortilla warmer”. 

  1. Take two large plates and turn the top one upside down.
  2. Dampen about 5-9 paper towel and place in layers between the plates.
  3. Immediately after they have cooked, place each tortilla between 2 layers of paper towel and put the top plate back on top upside down.

 

Homemade soft tortillas/wraps

Serves: 8 tortillas

Time: 20 mins (incl cooking)

Ingredients:

  • 2/3 cup warm water
  • 1 tsp salt
  • 360g self-raising flour (or plain flour + 1 tsp baking powder)
  • 3 tbs olive oil (4 tbs for my American friends).

Method:

  1. Prepare your “tortilla warmer”.
  2. Combine salt, flour and oil in a bowl, rubbing with your fingers to mix through evenly.
  3. Slowly add warm water, stirring until combined.
  4. Knead for a few minutes until smooth and workable. Divide into 8 balls.
  5. Pre-heat a large, dry (no oil) frying pan over medium-high heat.
  6. Roll one dough ball into a flat circle (2-3mm thickness).
  7. Cook in pan for about 60 seconds, until brown in spots (usually some parts begin to puff up). Flip and cook for another 30 seconds.
  8. Place in your “tortilla warmer” to soften and keep warm.
  9. Advanced chefs: Roll your next ball while you’re waiting.
  10. Repeat with remaining balls until all of your tortillas are done!
  11. Eat and enjoy. They’re amazing.
